How do I place a subject on a new layer in PS

I thought I knew how to do this, but it's been so long I've forgotten. I know it involves choosing and isolating the subject but I just can't seem to get this effect. Attached are some examples I grabbed from google. Can someone walk me through this process? Tutorials I've looked at online make it so complicated, I remember it used to be much simpler than they make it. Thanks!

The Quick Selection Tool (W) would probably be my first choice. Do you have an example of an Image of what you are trying to isolate

For example, the rocks in this image. I know how to select them but how do I place them on a new layer with no background?
